What’s the buzz with Honey?

Honey is a food source created by honeybees and derived primarily from nectar from flowers.

Our bees only harvest nectar from flowers in remote and undisturbed glades and forests in the Transylvanian foothills, well away from the influence of pesticides or pollutants.

All our honey is raw, unheated and unprocessed and straight from the comb so as to preserve enzymes, micronutrients and flavour.

Honey is the only food that keeps indefinitely; honey has been found in Egyptian tombs that is viable, dating back 3,300 years.

The colour and flavour of the honey is directly influenced by the nectar source (the blossoms) the bees visit.

We are able to offer four different honey types, made by the bees at different times of year. We have

Acacia

Acacia honey is suitable for diabetics. This is due to its very low sucrose and high fructose sugar content, which results in a slow absorption and increase in blood sugar levels. This also keeps this honey in a liquid form for a very long time. It is mild flavoured and an excellent
substitute for sugar in tea and coffee, and makes a great compliment to fresh ricotta cheese. It is particularly favoured by children.

Linden Flower

Linden flower honey has a distinctive floral flavour. A great honey for combining with herbal teas. Recommended for the prevention and treatment of catarrhal diseases.

Wildflower

Wildflower honey is the most nutritious honey, containing a range of vitamins, minerals and antioxidants. As a result it is a great prophylactic remedy. Its flavour will vary each and every year, depending on the range and proportion of flowering species at the time. A great compliment to fresh cheeses.

Mana

Mana, or honeydew honey is a distinctive, dark honey with a unique caramelized flavour, only found in uncultivated, forested zones. It is highly rich in mineral salts, and recommended for sports people. Excellent with pastries.
